Rock Lobster tail, 5oz in size.
Thaw overnight in the fridge or place the sealed bag under cold water for 15 – 20 minutes or until thawed.
Cut down the centre of the tail with kitchen shears. Turn the tail over and gently crack down the centre between the swimmerets. Turn back over and gently pull the meat out on top of the shell. Rinse meat with fresh water. Grill, steam or bake at 350F until shell is bright red and meat is firm and opaque.
What do the #’s mean? Example 3-4, 4-5, 7, 8, etc. refers to the approx. weight per tail in ounces, the smaller the number the smaller the tail.
Atlantic versus Rock
- Atlantic tails (cold water) come from Canadian or US waters, they have a thicker shell and are believed to be sweeter in flavor
- Rock Tails (warm water) come from Caribbean waters (Cuba, Dominican, Haiti, etc.), they have a thinner shell and a higher ratio of meat to shell than Atlantic
