To Prepare

Defrost Lamb in Refrigerator Overnight before Cooking. Preheat oven to 425 F. Place lamb rack on parchment paper lined baking pan, rib side down. Cook approximately 15-20 minutes, or until thermometer reads an internal temperature of 140 F at thickest point for a rosy Medium doneness. Let rest 7 minutes before carving.
