Note: after thawing, shiny slime will appear on the skin. This slime is a fresh slime, and not a sing on decomposition as appears on stale fish. It is perfectly normal for the Char skin to be slimy



To Prepare

Arctic char’s silky texture is beautifully countered by skin crisped to perfection using this easy method:

Heat 2-3 tbsp of oil in a cast iron skillet or nonstick pan over medium-low heat

Season the fish well with salt and pepper

Cook, skin side down and undisturbed, for 7 minutes (this allows the fish to cook from the bottom up so the flesh stays moist and the skin gets so crisp that it crackles)

Note: if the pan is too hot, the skin will become crisp before the top finishes cooking (it should look just opaque), then you will need to flip it over briefly to finish
