Characteristically, Wagyu beef is highly marbled. This marbling gives the beef its ultimate taste and tenderness. When cooked, the marbling is absorbed into the muscle and gives the meat its fine palatability and flavour.
To Thaw: Thaw overnight in the fridge or place the sealed bag under cold water for 15 – 20 minutes or until thawed.
Because of the finely marbled fat, special care must be taken not to overcook the meat as the fat melts quickly and burns easily. Sear it it quickly on a hot pan for no more than 90 seconds on each side. Cooked this way, the beef melts in your mouth, leaving a buttery taste that lingers.
